A traditional salad from Tunisia that is so summery and refreshingly delicious. Don't skip the apple nor the onions, even if you think you won't like them in a salad. You will! It is a delightful combo. Typically eaten as a side for a larger meal, simply with some good bread it would make a delicious, light summer meal.

Ingredients
1cupapples, diced (about 2 small)
1cuptomatoes, diced (about 2 small)
1/2cuponion, diced
1cupcucumber, diced
1/2cuplong green pepper, dicedoptional
2tbspfresh lemon juice
2tbspolive oil
2tbspdried mint, chopped fine and loosely packed
Instructions
Wash and dry the fruits and veggies, and peel the apple.
Chop apple, cucumber, onion and tomato in a similar-sized small dice, collecting all into a serving bowl large enough to fit and toss it all. If using, chop pepper and add to the same bowl
Add olive oil, lemon juice, and dried mint, and toss to combine. Serve immediately, or keep in the fridge up to an hour, until ready to serve
